SPLIT PEA SOUP WITH HAM

This colder weather got you feeling like you wanna bundle up with some soup? 
Throw these simple ingredients in the pot while you wait for the weather to warm up.

  • 1/2 cup salted butter

  • 2 cups of chopped onion

  • 1 cup of diced carrot

  • 1 cup of diced celery

  • 1 teaspoon of ground salt

  • 1/2 teaspoon of ground pepper

  • 2 cloves of minced garlic

  • 1 pound of split peas (rinsed)

  • 1 meaty ham bone

  • 2 teaspoon of thyme leaves

  • 6 cups of chicken stock

  • 2 cups of water

  • 1 cup of diced ham

INSTRUCTIONS

1. Melt butter in a large pot. Add the onions, celery, carrot, salt and pepper. Cook until vegetables are softened and begin to brown for 5-8 minutes. After vegetables have softened add garlic and cook for 1 minute.

2. Stir in the split peas. 

3. Add the ham bone and bay leaf. Stir in the chicken stock and water. Bring it all to a boil, reduce the heat and simmer uncovered for 60-90 minutes. Stir occasionally until split peas are cooked. 

4. Add diced ham during the last 15 minutes of cooking. When ready to serve, remove the ham bone and bay leaf. 

5. After removing stir in the remaining 1 teaspoon of thyme. Season to taste with salt if needed.
