SPLIT PEA SALAD

THINK IN THE BOX

Just in time for summer, this warm salad is sure to be fresh and fun! This simple recipe takes less than 45 minutes to make and would make a wonderful side dish to any of your meals! 

INGREDIENTS

  • 2/3 cup dried green split peas

  • 1 1/2 cup vegetable broth

  • 2 cups of cherry tomatoes

  • 1 cup of frozen corn kernels

  • 2 tbsp parsley

  • 2 tbsp basil

  • 2 tbsp oregano

  • 2 tbsp chives

  • juice and zest of 1 lemon

  • 2tbsp olive oil

  • 1 tbsp dijon mustard

  • 1 tsp maple syrup

  • 1/2 teaspoon garlic powder

  • salt and pepper

PROCEDURE

1. Combine the split peas and broth in a medium sauce pan over high heat, cover, and simmer until the split peas are tender, but not mushy and most of the liquid is absorbed, about 20 minutes.
2. Combine the cooked split peas in a large bowl with the tomatoes, corn, parsley, basil, oregano, and chives. Toss well to combine.

3. In a jar with tight-fitting lid, combine the lemon juice and zest, olive oil, dijon, syrup, garlic powder, salt, and pepper. Close and shake well to combine.
4. Pour dressing over the salad and toss to coat.
