CHICKPEA PASTA SALAD
A new twist on a cookout favorite that everyone is sure to love.
Quick, simple and filled with different kinds of ingredients that will make this dish both light and savory.
INGREDIENTS

2 cucumbers (chopped)

1 large bell pepper (chopped)

2 cups of cherry tomatoes (halved)

1 medium red onion
-
1 can off chick peas (drained and rinsed)

1 large carrot
-
1/2 cup of feta
-
1 box of pasta (your choice!)
dressing

1 tablespoon of minced garlic
-
3 tablespoons of olive oil
-
2 tablespoons of lemon juice
-
1/2 teaspoon of basil
-
1/2 teaspoon of oregano
-
1 teaspoon of parsley
-
salt and pepper to taste!
INSTRUCTIONS
1. Start with cooking your pasta. While the pasta is cooking start chopping the cucumber, bell pepper, cherry tomatoes, red onion and carrot.
2. For the dressing, place all ingredients into a mason jar and shake well. Keep refrigerated until ready to use.
3. Once the pasta is done cooking, combine all your vegetables and the pasta into a large bowl. When all the ingredients are combined add the dressing and enjoy!
